guacamole

There are many great guacamole recipes out there, but this recipe is perfect to me. For all my cilantro-tastes-like-soap friends out there, this recipe skips that silly ingredient. Plus, it goes heavy on the citrus making this a perfect pair with a heavier dip like my skillet queso.

Ingredients:

  • 4 ripe avocados

  • 1 lime

  • 1 lemon

  • 1 roma tomato

  • 1 small white or yellow onion

  • 1 clove of garlic

  • salt

  • pepper

  • tabasco

Instructions:

  1. Petite dice 1 onion and 1 roma tomato, then add to a bowl (Note: If the onion is large, use half or a quarter depending on your preference)

  2. Mince 1 clove of garlic and add the same bowl

  3. Squeeze juice of 1 lime and 1/2 lemon into the bowl

  4. Add 1 teaspoon of salt, 1 teaspoon of fresh cracked pepper, and a few dashes (or a lot of dashes) of tabasco

  5. Allow this mixture to sit for a least 10 minutes or up to 8 hours

  6. Slice open 4 avocados and remove the pits

  7. Add avocados to the bowl and mash with a fork, potato masher, or pastry cutter (personal preference!)

  8. Taste for salt and citrus - if needed, add the other 1/2 lemon and a pinch more of salt

  9. Serve with chips. Bon appetit!

*Simply increase or decrease the quantities of ingredients depending on the amount of friends you’re sharing your guac with :)
