broccolini

I’m ashamed to say it took 26 years of life for me to understand the magic of broccolini. This simple side dish is a step up from the classic broccoli and makes you feel fancy in the comfort of your home. Feel free to use the below as a guide and adjust where you may. Bon appetit!

Ingredients:

  • 3-4 heads of broccolini, depending on size

  • 1-2 lemons

  • 2 cloves of garlic

  • Extra virgin olive oil

  • Salt

Instructions:

  1. Preheat your oven to 425°

  2. Clean your heads of broccolini and lay on a towel to dry

  3. If the broccolini pieces are large, slice in half longways. If the heads of broccolini are small, feel free to keep them as is.

  4. Finely mince 2 cloves of garlic

  5. Toss your broccolini and minced garlic together on a sheet pan

  6. Add extra virgin olive oil (~2 tablespoons), 1 teaspoon of salt, and juice of 1/2 lemon, then mix together

  7. Roast at 425° for 10-12 minutes, until it starts to char

  8. Remove from the oven and squeeze the remaining 1/2 lemon over the top, then toss together

  9. Taste for salt and citrus - if needed, squeeze additional lemon and a pinch more of salt

  10. Serve warm or at room temperature* with a few lemon slices as garnish. Bon appetit!

*Roasted broccolini is great at room temp, which makes this a great side dish for your next dinner party. Prep ahead and save on oven space!
